    chicken and marinade

    1kg of chicken pieces

    1 teaspoon salt

    1 teaspoons sugar

    2 teaspoons seasoning

    3 tsp curry oil (3 tsp) (optional or just use vege oil)

    1 tbsp satay (1 tbsp) (or 1 tbsp of chili oil)

    4 tbsp unsweetened milk

    Cooking ingredients

    4 tablespoons cooking oil

    1 stalk of lemongrass

    1/2 tbsp shallots

    1/2 tbsp garlic

    1/2 tbsp ginger

    6 sprigs of fresh curry leaves or 10 dried curry leaves

    2 whole tbsp of curry powder (viet version if possible)

    800ml of water, for better taste ½ water and 1/2 fresh coconut water

    1 knorrs chicken stock pot

    500g potato

    500g carrot

    2 tbsp condensed milk (this is the new secret ingredient)

    1 cup coconut milk

    1 onion

    Serve with vermicelli, crusty bread, or rice

    Method

    In a pot add 4 tbsp of vege oil and 1 whole stick of lemongrass

    Add shallot, garlic and ginger

    Add in the curry leaves

    Add in curry powder

    Fry off for a few seconds

    Add in the marinated chicken and fry for a few minutes on each side, add in the rest of the chicken marinade

    Add in the 800ml of water/coconut water liquid combo.

    chicken stock pot

    Bring to simmer for 20 mins

    Separately fry or par boil the potatoes

    Add in the potatoes to the main pot simmer for another 10 mins

    Now add the condense milk and coconut milk combo

    Add in 1 sliced onion

    simmer for another 10 mins

    Final seasoning, of fish sauce, maybe sugar but doubt it needs it

    serve with crusty bread or rice
