Needs some refinement but tasted great. Even the kids (including the one who at this date last year wouldn't touch meat) enjoyed it…

I also need to figure out what to do with the rest of the puff pastry, and am open for suggestions…

    That Beef Wellington looks great and I am sure it tasted as good as it looks!

    As for the leftover puff pastry, the possibilities are endless! For something sweet, you could try apple turnovers.

    I personally like making cheese and meat turnovers, pinwheel cheese danish, and strudel with puff pastry.

    Looks excellent! I always struggle with the juices ruining the pastry.
