    The colors in the presentation are really beautiful, but I think the salmon colored fabric square (? not quite sure what it is) detracts from the elegance of the presentation—it looks a bit like a cocktail napkin. Maybe it would be more effective to balance the shell on a bed of pink himalayan salt, or a seasoned rock salt instead (maybe infused with something that would contribute to the experience of the dish via aroma, like lemon peel)
