I went looking through my old photos and found this gem from back when I first became a sous chef. They let me do my first catering for this wedding party. I snagged a quick photo right as our desserts went out to the guest.

    Oh man, I was gonna say, who tf still poaches pears? One of my favorites that seemed to blow up and die down, probably easier to find a frozen wedge salad than a poached pear these days.

    As for plating, not sure if you’re looking for insight as this isn’t something you’ll be redoing before service, but that drizzle, sign of the times maybe?

    I’m gonna go poach some pears now, is… is it pear season?
