    cod was simmered in miso-dashi broth instead of milk.

    the straw fried potato was sautéed with the classic onion and added some scallions.

    the beaten eggs instead of the classic salt and pepper were mixed with soy, mirin and sake.

    topped the dish with a soy cured yolk and furikake.

    a taste of japan with a portuguese soul.
