Why so much beet? It looks tasty, but not really cohesive. The beet feels wrong texturally and in color. I need to see another bright color to not feel so offput by it. Perhaps some green?
The cabbage looks ugly with big pieces of cracked pepper as well, though the cook is nice. WHAT IS ON TOP OF THE MUSHROOM? It looks horrific.
Consider a different shape of plate. Perhaps longer to go with the cabbage quarter. Less beet. The mushroom needs a total visual rework.

I predict your creation tastes outstanding. Maybe a larger plate? I would pay for this. Younger cabbage?

mushroom looks kinda dry and unappetizing, the cabbage looks great. i think in each of the three photos you provided there’s too much symmetry going on, and all the elements are of relatively equal visual weight. maybe lay less beet spread, center the mushroom, and cut the cabbage into a smaller wedge to asymmetrically offset against the mushroom?

Maybe less beet puree ? Only some dots. Some vegan mushroom based jus to connect everything. Some texture. Some nuts or toasted breadceumps. The cabbage looks hard. Braise it in the jus liquid before reducing it.Shroom look kinda overcooked. Also not sure if the dish needs both shroom and cabbage. Maybe one of them in smaller. Kinda hard to plate sth nicely up with 2 big main pieces.

Something about the beet puree needs to be changed, can you use a different color of beet? The red is shocking and in that formation it looks like a huge tongue

Center the mushroom, put the cabbage on its side with the curve matching the curve of the plate, swoop beet spread around the mushroom and use less (unless the amount of beet spread is necessary for the dish to taste good)

Waaaaayyyyy too much beet spread, just do dots in increasing side along the side of the plate. The mushroom also looks a bit strange. Maybe do something to showcase the beans more?
