Latvian vs. Lithuanian Pink Soup

    * 4 medium potatoes, cooked and peeled 
    * 4 eggs, hard boiled and peeled
    * 1 cucumber
    * 4-6 dill pickles
    * Radishes
    * Chives or scallions
    * 2 cups pickled beets grated (if store bought) or see recipe below 
    * 1 bunch dill
    * 1/2 gallon kefir (or 1 1/2 cups plain yogurt thinned with 1/2 cup milk) 
    * 1/2 teaspoon horseradish
    * 1/2 teaspoon dijon mustard
    * Salt and pepper to taste
