I’m not a fan of these caramel lattices. They don’t eat very well in my opinion and give nothing to dishes except an after thought

I’m not a fan of the look of the dish. It looks like dirt on the bottom with a slice of bologna and a tuile

I’d lose the mint unless you’re expecting someone to eat a whole mint leaf. If you really have to have some green, dark chocolate and peach both pair really well with basil.
