I feel like the chips are too big? Not an expert, but I think generally tartare looks better on a coloured plate rather than a white one. Personal preference though!

In a perfect world I think the chips would be best stacked on a small side plate but in reality table size matters and it isn’t always an option. My only qualm is with the micro greens – are they actually adding anything to this dish other than a pop of colour? Are there any fine herbs or specific micros that actually lend to the overall concept and flavour profile that you’re going for? It just seems like an afterthought.
Other than that, great dish! It looks super tasty.

There’s too much stuff on top of the tartare, it’s too busy. Put them off on one side so people can see the meat.
