    An interesting pairing. The pea shoot seems superfluous and rather unpalatable to me. Bread or toast points a la carte or already on the table? I am a fan of a classic preparation with a yolk for some silky succulence so I’m curious about the texture with a thick disk of cheese. For me in my head it comes across as cloying.

    This is entirely subjective but I feel like ring-mold towers feel very 90s especially if it’s compact and tall.

    I would personally much prefer just using a spoon to make a quenelle of tartare and put it on top of a ring of goat cheese, and add some herbs and truffle shavings on top. Something less “stacked”

    Ring mold is kind of outdated and the paring of raw beef and goat cheese doesn’t sound very appealing to me.

    It would’ve made more sense to spread it evenly on the inner smooth surface of this dish

    So for me the picture is incomplete, as you serve it with bread, I am assuming? It’s just essential to deliver some crunch as a counterpoint to the soft tartare de bœuf.

    Also as a foreigner I am not sure about the name: Is it beef tartar or steak tartare?

    I don’t like the way the truffle chiff looks. Reminds me of bugs or the dirt that pea shoot is growing out of.

    jk it’s the truffles.  I hate truffles.  Plating feels… subpar

    Looks very nice. Not a huge fan of the pea shoots but that may just be me.

    Looks too much like a potted plant. Lose the pea shoot and change the shape of the truffle.
