Given you write about the limited options, I wonder how this tastes if adapted to local cuisine.
As in, keep the rice and the gim and change the inside to locally more available ingredients.
For instance, you could do pieces of deer/lamb with red cabbage, potato and lingonberries.
Or herring with gherkins and pickled onions.
Or, some aged cheese (maybe gamalost, since you’re in Norway) with sauerkraut and pumpernickel-style bread.
