    Lose the random blueberries. Give me more ice cream, lose the flowers. Incorporate the bananas and sauce into the rest of the dessert, I don’t want to just be forking up lone nae naes off the side of the plate. Ask yourself why refine something as simple and comforting as bananas foster? Does doing so risk it becoming overly contrived? If I gave you this plate or a big bowl of whiskey ice cream covered in bananas and rum which would you prefer?

    I think your plate is probably entirely too big for this dessert. And no on the blueberries- it looks like you tried to make a paw print with them

    If anything you should’ve layered all together, this just looks deconstructed for the wrong reasons and I don’t think the blueberries even go with this dish.

    The flower mold while potentially aesthetically pleasing leads me to believe the ice cream is not tempered correctly and likely hard as a rock when served.

    The bananas could have been cut in a way that lets them be plated nicely *with* the ice cream amplifying the flower visual. Suggestion: three long spears cut on bias. Fanned from central point-ish. Flower pod or scoop of ice cream anchoring the center point. Sauce around.

    If you really want the color contrast of the blueberries, maybe freeze them and just before service roll in superfine sugar and place in the center of each flower. Like a daisy. Otherwise – leave em off. They make it look silly as is.
