
Something I whipped up at home for myself. Bone marrow stuffed with Pearl Barley and glazed with marrow, Braised Beef Short Ribs and fresh mint on top. Sauce is a modified version of demi glace with a coffee spin.
I clearly need practice plating with sauces, but I really enjoyed these flavours.

I personally do NOT like how that looks. The barely makes it look grotesque. Wheres the marrow? I see a bone, barely and short rib meat
I think I’d find this a pain in the ass to eat, but it’s pretty and I bet it tastes great
I like the idea of cooking a grain with marrow and putting it back in the bone. Think a nice crunchy aspect would be nice, everything sounds kinda soft.
Looks delicious. I like the presentation. I had bone marrow at Collichio & Sons back in 2011 and this reminds me of that.
You can probably dot the sauce over top to keep the bone clean, being able to touch a clean outer bone would be important for me. And how rich was this? You have some freshness with the mint but I might’ve even put some strands of pickled carrot or something to cut the texture/flavour weight
Barley needs cooking out in some stock, then finished with some jus and fresh parsley etc . It can take and needs a huge amount of flavor. I’m not sure if just glazing it in marrow bone is enough 🤔
You can dry the cookes barlow and then flash fry it. Makes a lovely crisp and stays within theme
I’d definitely eat it and the flavors are probably solid, however, this doesn’t look like it would eat well. I’m not a fan of the sauce on the plate touching the bone like that. I would definitely want the outside of the bone to be clear of any sauce as I might have to grab/secure it with my hands to spoon out the insides.
Also the sauce itself is not going to pick up well regardless of where you are placing it on the actual plate
Consider incorporating the sauce into the filling. Toss the barley and bone marrow together in the sauce and fully coat it – then place that in the bone
Weirdly it looks super dry
Or they set it out for pictures and just sat out for a long time.
As someone with trypophobia, this is an absolute nightmare. Barley pearls already triggering. Zoom in, all the porous bone structure
