I just made this picanna sous vide. I had to weight it, otherwise its wanted to float. After searing, this is what it looks like inside. Is it safe to eat?

How does it smell? Looks odd but fine if that makes sense?

Got that Arbys cut.

How long did you sous vide for ? I had a tenderloin sitting on 125 overnight and it looked similar.

I don’t think I would eat that. It definitely looks off, though I can’t say what’s wrong with it.

I don’t think I’ve ever seen a steak look like this before. But if it smelled fine before you cooked it, you should be fine. Maybe just bad quality cut.

I don’t think I could make myself eat even if it’s probably fine. What a shame.

Yeah, that’s a no from mez chef.

My first thought is freezer abuse that ruined the molecular structure?

Wtf, never seen Picanha looking as weird as that, it looks like a sourdough
This may just be a weird guess, but is it possible the roast had steatosis and all the fat rendered out during the sous vide process leaving the meat to look like this?
To me it almost looks like a smoked brisket when the fat is almost completely rendered out.
I’ve had this happen with short rib. This is overcooked and over-rendered. It’s fine to eat but it won’t taste so great. Can I ask how long you cooked it for? My short ribs that looked like this were in the bath for over 24 hours and were extremely soft and mushy with a flavor that I can’t even quite describe other than bloody and metallic.

You’ve got some friends inside your steak.

That looks horrifying.

Looks perfect to me!
I mean, if you are questioning it to the point where you are posting on reddit, you probably already know deep down that you shouldn’t eat it.
Looks like it had been frozen
It’s my fault for coming online really.
The moment you took a picture to post it to Reddit you knew it your heart it was fucked.
Maybe the fat just renders out or something, idk looks freaky
This looks great, for a sourdough cross section.
This photo triggers my trypophobia. Look at all the tiny eyes peeking out from the tunnels.
What concerns me is that in my few years on Reddit, I’ve never seen a post where everyone is just like ” no clue what that is ¯_(ツ)_/¯”
