I’m just happy the decorative ingredients were actually used in the edible portion of the dish…
I can’t stand seeing an amuse sit on a bed unpopped popcorn when there was no corn in the actual dish

This is visually stunning. As a food fan (not a chef or anything), the rice is a question for me…why is it here? Do I eat it? Do I do something with it? The color difference could be achieved with custom plate design. But bravo, I love it.
