4 1/4 cups all purpose flour (plus a few extra TB if needed)
Cinnamon Filling
1 stick butter, very soft
1 cup packed dark brown sugar
1 TB cinnamon
1/4 tsp fine salt
2 tsp vanilla extract
Sticky Smear (Bottom)
1 stick butter, very soft
1 cup packed light brown sugar
1/3 cup honey
1/3 cup corn syrup
1 tsp cinnamon
1 TB vanilla extract
1/2 tsp fine salt
Other
2 cups chopped pecans
Method
Combine warm milk, cream, yeast, and sugar. Let sit about 5 minutes until slightly foamy.
Add eggs, egg yolk, butter, salt, and flour. Knead about 6 minutes until smooth and slightly tacky. Add a few extra TB flour only if needed.
Cover and let rise until doubled, about 60–90 minutes.
Mix the filling ingredients until smooth and spreadable.
Roll dough into about a 16×16 square.
Spread filling evenly over the dough.
Roll tightly into a log and cut into about 2-inch pieces. You should get 8 large rolls.
Grease a casserole dish and lightly coat with butter.
Spread the smear evenly across the bottom.
Sprinkle 2 cups chopped pecans evenly over the smear.
Place rolls cut side down on top of the pecans.
Cover with plastic wrap (lightly sprayed so it doesn’t stick) and let proof 1 hour until puffy and touching.
Bake at 350°F for 25 minutes until golden and cooked through.
Let sit about 5 minutes, then carefully flip the entire pan out while still warm.
