    I like the concept. Flavors sound great and the presentation is a good starting point…but im getting soap bar in dirty water.

    I’m not sold on the mushroom and halibut/cuttlefish combo.

    But I LOVE the old school mousseline. Used to do a heap of that back in the early 2000’s. I miss making scallop and prawn mousse into raviolis

    Awesome throwback and I’d probably really enjoy eating this a lot.
